Chop - an American steakhouse with a French flair, offering USDA Prime steaks and sous vide top cuts of beef. Our menu also features exquisite French salads, soups, specialty French sandwiches, appetizers, assorted breads served with honey truffle butter, and mouthwatering pastries.

Founded by executive chef Tony Ianne, Chop continues a legacy of culinary excellence spanning four generations. Since 1935, the Ianne family has operated landmark restaurants in Southern Colorado, with their original location now celebrating its 90th year of continuous operation. Tony himself has successfully launched and managed ten renowned restaurants, along with a thriving catering business.

At Chop, we believe in making a difference. Partnering with Pueblo Diversified Industries, we source fresh organic hydroponic vegetables grown by individuals overcoming challenges, supporting both sustainability and the local community. Additionally, our location at Pueblo Community College offers a spectacular setting, reminiscent of New York City’s iconic Tavern on the Green.

Tony is passionate about second chances, a philosophy deeply embedded in his family’s history. His business partner, Paul Vigil, is a testament to this vision, having transformed his life through Tony’s mentorship to become a respected community leader.

Chop is a scratch kitchen that uses only the finest seasonal ingredients. Our menu is both creative and unique to Southern Colorado, offering gourmet-quality meals at competitive prices. Every dish is crafted with care, ensuring an exceptional dining experience.

Tony and Paul’s catering expertise has earned them a reputation as Southern Colorado’s premier catering team. Whether serving intimate gatherings of 20 or large-scale events of up to 20,000 guests, they’ll bring unparalleled experience and dedication to every event. At our state-of-the-art facility at Pueblo Community College, we can host banquets for up to 400 guests, complete with an immersive 3D theater experience.

With a breathtaking campus park and an exclusive amphitheater, our outdoor venue offers seamless catering for events of up to 4,000 guests.
